Hand harvesting and manual selection, immediate gentle pressing to preserve the typical varietal aromas. Alcoholic fermentation in stainless steel tanks at a controlled temperature of 12–15 °C. Aged for 8 months in stainless steel tanks.

The philosophy of minimal intervention also extends to the winery, where small batches of grapes are carefully processed using the most modern technology, a simple, sustainable enology to obtain healthier, more perfect wines while respecting our environment.
