Port Wine Cocktails – 5 Summer Drinks with Port from Portugal
Port wine in winter, by the fireplace, with chocolate – everyone knows that. Port wine in summer, with ice, tonic, ginger beer, and a slice of lime – the Portuguese have known this for decades, and the rest of us are just learning. In Lisbon and Porto, the white Porto Tónico is as common between May and September as the Hugo spritzer in Zurich. Once you get it, it's the most relaxed summer drink you can imagine: sweet, but not overly sweet, fruity, low in alcohol, ready in 30 seconds. Here are five recipes that work in any Swiss kitchen with just a couple of ingredients – and at the end, an idea on how to bring a bit of winter to the buffet a little earlier.
What you need for the summer port setup
Almost nothing. Really. You need:
- A bottle of port wine: Which one exactly – that depends on the drink (more on that below).My tip for starting out: a Sequeirinha Porto Reserva Branco (White) and a Sequeirinha Porto Tawny Reserva. With this, you cover 90% of all drinks.
- Ice: Large, clear cubes. Not crushed – it dilutes too quickly.
- Three fillers, for example, from Coop: Tonic Water (Schweppes or Fever-Tree), Ginger Beer (Fever-Tree, Goldberg, or Coop's own brand) and a San Pellegrino Limonata (the one with lemon) – this is our Swiss substitute for the Portuguese "Forkinton Limonada," which no one carries here.
- A lime, an orange, a few strawberries, and fresh mint. For decoration and aroma.
That's all you need. No cocktail school, no fifteen types of bitters, no 80-franc tools. A glass, ice, two bottles, a filler. Done.
Recipe 1: Porto Tónico – the Portuguese Summer Classic
The drink that passes as "Hugo" in Portugal – only more elegant, less sweet, and with more character.
Ingredients (per glass):
- 6 cl Sequeirinha Porto Reserva Branco (or another white port)
- 12 cl Tonic Water (Schweppes Indian or Fever-Tree)
- 1 orange slice
- 2 mint leaves (lightly pressed, not torn)
- 3–4 large ice cubes
Preparation: Fill a wine glass or highball with ice. Pour white port over it, slowly add tonic, lift once with the spoon's stem – do not stir. Add orange slice and mint. Drink while the tonic is still sparkling.
Variation: For a drier taste, use a 1:3 ratio (port to tonic). For more port flavor, use 1:1.5.I drink 1:2 – the Portuguese standard.
Recipe 2: Porto Mule – Tawny instead of Vodka

The Moscow Mule for adults with taste. Plays in a different league quality-wise, costs half at home.
Ingredients (per copper mug or glass):
- 5 cl Sequeirinha Porto Tawny Reserva (or another Tawny Port)
- 1 cl freshly squeezed lime juice
- 12 cl Ginger Beer (Fever-Tree spicy, available at Coop)
- 1 lime slice or 3 mint leaves
- 4–5 ice cubes
Preparation: Fill the copper mug with ice. Pour in port, lime juice, and ginger beer. Stir briefly with a spoon (not too much, or the carbonation will be lost). Garnish with lime or mint.
The Tawny gives the drink the caramel-nut aromas that vodka could never have.Anyone who has never had a Mule with Port immediately notices what the vodka version is missing: character.
Recipe 3: Porto Strawberry Spritz – Rosé Port with Limonata

The simplest drink on this list. Three ingredients, one minute, one summer.
Ingredients (per glass):
- 8 cl Sequeirinha Porto Rosé (or another Rosé Port)
- 12 cl San Pellegrino Limonata (Lemon)
- 3 fresh strawberries, halved
- 4 ice cubes
Preparation: Fill the glass with ice. Add strawberries. Pour in Port, top with Limonata. Stir once with a spoon.
Pro Tip: Instead of ice cubes, you can also use frozen strawberries – they look better, dilute less, and give the drink a gentle fruity sweetness.This is the variant that is most frequently served in my garden.
Recipe 4: White-Port-Spritz with Espumante – the Garden Aperitif
This is the unique creation that I particularly recommend to you. White Port + Portuguese sparkling wine + sugar + fruits – an aperitif that tastes like an Aperol Spritz with an adult twist.
Ingredients (for one glass):
- 4 cl Sequeirinha Porto Reserva Branco
- 10 cl Flutt Baga Rosé Bruto or another dry Portuguese Espumante
- 1 teaspoon fine sugar (or sugar syrup)
- 1 piece of peach, 2 raspberries, and 1 orange slice
- 4 ice cubes
Preparation: Gently press the fruits with the sugar in the glass (do not crush). Add ice. Pour in the port, stir briefly until the sugar dissolves slightly. Top up with ice-cold Espumante.Lift with the spoon once.
The result: lightly sparkling, fruity, with the honey-spice of the white port and the fresh acidity of the sparkling wine. Perfect for summer evening aperitifs, birthdays, weddings, and everything in between.
Recipe 5: Porto Rita – the Portuguese Margarita

For those who love Margaritas but can't handle the sharp tequila at home: here's the milder version with White Port. Sounds strange, but it works.
Ingredients (for one glass):
- 4 cl Sequeirinha Porto Reserva Branco
- 2 cl Cointreau (or Triple Sec from Coop)
- 1 cl sugar syrup
- 1.5 cl freshly squeezed lime juice
- Crushed ice
Preparation: Add all ingredients except ice to a shaker. Shake vigorously for 8–10 seconds until the shaker feels cold. Strain into a glass with crushed ice.Garnish with a lime slice – or, if you're into showmanship, with a salt rim on the glass (press the lime edge, dip into a plate with sea salt).
Which port pairs with which drink?
Three simple rules of thumb to avoid despair on the shelf:
- White Port (Branco): for everything fresh and bright – Tonic, Spritz, Margarita-style. Lower in alcohol impression (though as high as Tawny), drier, lighter.
- Tawny: for everything that can handle spice and depth – Mule, old favorites, drinks with ginger beer or bitters.
- Rosé: for drinks with berries, Limonata, tonic – fruit-forward, easygoing, the simplest entry in summer.
