What is the difference between Ruby and Tawny Port wine?
The difference does not originate in the vineyard, but in the cellar. Both start as robust, fortified red wine from the Douro. Then their paths diverge during maturation – and it is precisely this that turns the same base wine into two completely different glasses.
Ruby matures reductively: in large wooden vats or steel tanks, where hardly any oxygen reaches. This preserves the deep red color and the youthful fruit.Two to three years, then into the bottle. Tawny matures oxidatively: in small oak barrels, the pipas. More wood contact, more air, slower transformation. The color loses the red and becomes amber to topaz brown. At least three years – an old Tawny can lie in the barrel for decades.

Tawny tastes of time. The oxygen in the barrel breaks down the fruit and builds something new: walnut, hazelnut, caramel, fig, dried apricot, a spoonful of honey. The texture becomes silky, the finish long and calm. Ruby or Tawny – what pairs with which food?
This is where the distinction is most delightful. Ruby loves chocolate. Dark chocolate, brownie, mousse au chocolat, Black Forest cake – the bitter fruit of the Ruby and the cocoa complement each other. Also with berry desserts and a strong blue cheese like Stilton, Ruby is a hit: the salty sharpness against the sweet fruit.

How do I serve Ruby and Tawny correctly?
Both are served slightly chilled in the glass, not warm. Serve Ruby at 14 to 16 °C, Tawny can handle a bit cooler, 12 to 16 °C. A tip that always works: place in the refrigerator 20 to 30 minutes before pouring. A decanter is not necessary for either – Reserva-Ruby and Tawny have no sediment. Open the bottle, pour, done.
The practical advantage of Tawny: It is already accustomed to air in the barrel. Once opened, it keeps for two to three months in the refrigerator. Ruby is more delicate and should be consumed within two to four weeks. Not a big drama – but good to know if you only have a glass now and then.
