How long does opened wine last? And why Tawny is the exception

A typical white wine stays fresh for three to five days once opened. Red wine as well. Sparkling wine lasts one to three days before losing its carbonation. And then there's Tawny Port: it can sit in the fridge for four to six weeks and still taste like the first evening. The reason for this is the most interesting part of this story – and it also explains why a Vintage Port is done after two days.

How long does opened wine really last?

Once the cork is out, a clock starts ticking. Oxygen reacts with the wine, fruit aromas disappear first, then the rest turns towards vinegar. How quickly this happens depends on three things: alcohol, acidity, and how much oxidation the wine has already undergone.

The rule of thumb for all open bottles: seal and refrigerate, even the red wine. Cold noticeably slows down the reaction. Just place it on the table 20 minutes before drinking.

Why does Tawny Port last for weeks and Vintage only two days?

Because with Tawny, the worst has already happened – intentionally.A Tawny ages for years in small wooden barrels, where oxygen constantly interacts with the wine. The red fruit aromas disappear, giving way to notes of nuts, caramel, dried figs, and that amber hue. What is considered damage in an open bottle of red wine is the production method for Tawny.

When you open such a bottle, oxygen can hardly do any more damage. Additionally, around 20% alcohol further stabilizes everything.

The Vintage Port is the exact opposite. It is bottled unfiltered after two years and ages there without oxygen for decades. When you open it, this wine encounters air for the first time in its life. It's about as gentle as a plunge into cold water.

However, one must remain honest: Even a Tawny will eventually become flatter, with the alcohol becoming more pronounced.After six weeks in the refrigerator, it is not spoiled, but it is also not at its peak. My rule: an open bottle of Tawny lasts as long as I have guests – and they come back faster anyway when a 20 Anos is open.

How to properly store unopened wine at home?

For the unopened bottle, one important number applies: 12 to 13 degrees. Anything between 7 and 18 degrees is acceptable, but consistency is more important than the exact value. A cellar with a steady 16 degrees is better than a room fluctuating between 10 and 22.

  • Store in the dark. UV light causes wine to age too quickly. Regular light bulbs are not a problem, but direct sunlight is.
  • Natural cork lying down. Otherwise, the cork dries out and lets air through. With a screw cap, it doesn't matter.
  • 50 to 80% humidity. Too dry damages the cork, too humid damages the label.
  • Peace. Vibrations stir up the sediment in older bottles.

And the three places where no bottle should ever be: the kitchen (too warm, too many temperature fluctuations), the area next to the heater, and the freezer. The latter will push the cork out – I say this not out of theoretical interest.

The regular refrigerator is fine for a few months, but not for years: too dry, too cold, too much vibration.

Frequently Asked Questions about Open Wine

Can you drink wine that has been open for a week?

Drinking yes, enjoying usually not. An oxidized wine is not dangerous, it just tastes like applesauce and vinegar. If the bottle smells sharp or like nail polish, it belongs in the sauce rather than the glass.

Does red wine stay open longer than white wine?

Barely. Tannin-rich reds last a bit longer because tannin is a natural antioxidant. The difference is a day, not a week.

Does a vacuum pump help?

One to two days, no more. Much more effective is the simplest trick of all: pour the remainder into a smaller bottle, up to just below the closure. Less air in the vessel, less oxidation.

How long does a 40-year-old Tawny last after opening?

Just as long as a 10 Anos, so four to six weeks. The age in the barrel does not affect the shelf life after opening, only the complexity in the glass.

Should Port wine be stored lying down?

Vintage Port yes, it has a long natural cork and needs moisture. Tawny and Colheita usually have a stopper cork and are better stored upright – the stopper does not handle contact with alcohol well.
