SOIL: Schist – Silt
VINIFICATION: 50% of the grapes were harvested with noble rot and 50% with overripeness. Late manual harvest on November 05, 2019, in 20-kg boxes. Manual selection at the sorting table. Direct, gentle pressing. Slow fermentation with controlled temperature. Aged in French oak barrels. Bottled on May 22, 2023.
