DESCRIPTION

Tasting Notes

Pink color with a light salmon hue and medium intensity. Clear, translucent, and bright. Aromas of wildflowers and forest fruits. Elegant and well-balanced. On the palate, it is harmonious with good volume. Acidity with subtle yet present fruit notes. It is a single-varietal wine from high-altitude vineyards, between 450 and 650 meters, which gives it a well-balanced acidity on the palate.

VINIFICATION: Hand-harvested on September 20 and 21, 2022, in 20‑kg boxes. Manual selection at the sorting table. Direct and gentle pressing. Slow fermentation at low temperature (14 °C). Bottled on May 4, 2023.

GASTRONOMY: Wine that pairs well with smoked salmon carpaccio with dill, a burrata salad with red fruits and fig salad, risotto with Manchego cheese and raw ham (Pata Negra), mushroom risotto, and Japanese dishes.
