VinificationHand harvesting and manual selection, immediate gentle pressing to preserve the varietal aromas. Alcoholic fermentation in stainless steel tanks at a controlled temperature of 24–26 °C. Aged for 3 months in clay amphorae, followed by 12 months in new French oak barrels. Bottle aging from November 2014. -
