VINIFICATION:Manual harvest exclusively of grapes located at the base of the properly matured (lignified) canes. The wine was obtained by pressing whole berries without stems, followed by a long cold static clarification. Fermentation and ageing for 9 months on fine lees, with regular bâtonnage. The wine was then aged for a further 1 year in bottle.
