Dry or Sweet? Understanding Residual Sugar in Wine

«Dry» is not a matter of taste, but a number. A wine is considered dry if it contains a maximum of 4 grams of residual sugar per liter – or up to 9 grams if the acidity is high enough. Above that, it becomes semi-dry, and from 45 grams, sweet. The confusing part: A wine with 9 grams of sugar can taste drier than one with 4. How much residual sugar can dry wine have?

Residual sugar is what remains of the grape sugars when the yeast stops working. Either because it has processed all the sugar, or because the winemaker stops the fermentation earlier.The EU regulates the designations uniformly as follows:

For comparison: A liter of cola has around 106 grams of sugar. A dry red wine has two to three. Those who avoid wine because of the sugar are quite likely targeting the wrong beverage with dry wines.

Why can dry wine sometimes have 9 grams of sugar?

Because sugar alone does not determine taste. Acidity balances sweetness. A wine with 8 grams of sugar and 7 grams of acidity tastes fresh and dry. The same sugar with 3 grams of acidity tastes sticky.

This is exactly what the EU regulation reflects: A wine can be called dry up to 9 grams, provided the residual sugar exceeds the total acidity by no more than 2 grams. For semi-dry, the same logic applies with a 10-gram difference, raising the limit to 18 grams.

Practical example from our range: The Brejinho da Costa Sémillon 2023 has 9.9 grams of residual sugar and 6.15 grams of acidity. This places it just above the dry threshold and it is officially considered semi-dry – on the palate, hardly anyone notices because the acidity counteracts.

Why does a different scale apply to sparkling wine?

Carbonation masks sweetness, which is why sparkling wine can have more sugar with the same designation. And the terms are different: Instead of dry, it's called brut, Portuguese bruto.

  • Brut nature: 0 to 3 g
  • Extra brut: 0 to 6 g
  • Brut: up to 12 g
  • Extra dry: 12 to 17 g
  • Sec: 17 to 32 g
  • Demi-sec: 32 to 50 g
  • Doux: over 50 g

The trap lies in the middle: «Sec» is sweeter than «brut» in sparkling wine. If you want dry, choose brut or extra brut, not sec. This is the only place in the wine aisle where "dry" means the opposite of dry.

How truly dry it can get is shown by the Original Espumante Baga Bairrada 2018 with 0.3 grams of residual sugar – practically sugar-free.The Flutt Branco Bruto falls within the classic Brut range with 5.8 grams, giving it a rounder taste.

How much sugar is in Port wine and Moscatel?

Significantly more, and intentionally so. In Port wine, the brandy is added in the middle of fermentation, the yeast dies, and the unfermented grape sugar remains in the wine. That's why Port is sweet – not because someone added sugar.

Where do you find the residual sugar on the bottle?

Most of the time, not at all. The indication is not required for still wine, and many labels remain silent on it. On Portuguese bottles, it sometimes says seco or meio seco, but often nothing – then you have to consult the back label, the data sheet, or the retailer.

Frequently Asked Questions about Residual Sugar in Wine

How much sugar is in a glass of dry wine?

With 2 grams of residual sugar per liter and a glass of 1 deciliter, that's 0.2 grams. Even at the upper end of the dry definition with 9 grams per liter, it amounts to 0.9 grams per glass.

Is red wine drier than white wine?

Most of the time, yes. Red wines are almost always fully fermented because residual sugar does not harmonize well with tannin. White wines more often retain a few grams to round off the acidity.

What does "seco" mean on a Portuguese bottle?

Dry.For still wines, up to 4 or 9 grams of residual sugar. Caution with sparkling wine: There, "seco" is a medium sweetness level with 17 to 32 grams – dry means bruto.

Why does my dry wine taste sweet?

Mostly due to the alcohol. From about 14% Vol., alcohol tastes sweet on the palate, even without a single gram of residual sugar. Ripe fruit and vanilla notes from the barrel further enhance this impression.

Is Vinho Verde sweet?
